Sun shining, beautiful warm spring day... and I have eggs, eggs and more eggs!

    Do you have a recipe for lemon curd? If you end up with too many eggs (not that there is such a thing - I routinely go through 20 a week) then it's a great way to use them up. Then you can make lemon curd tarts, and drizzle cakes, and in summer you can do gooseberry curd, or rhubarb curd which is also awesome...

    Now I need to go and bake...

    I shall make sure you get some when a journey north or south is in the offing....I like making proper custard ....but then I`d need a new cow....don`t tempt me......
